Peanut Brittle (Microwave)

Ingredients

1 cup raw peanuts

1 cup sugar

1/2 cup white corn syrup

1/8 teaspoon salt

1 teaspoon butter or margarine

1 teaspoon vanilla

1 teaspoon baking soda

Directions

Lightly grease cookie sheet, and set aside.

Stir together peanuts, sugar, corn syrup and salt in an 8-cup pyrex measuring cup/bowl. Place in microwave and cook on high 7-8 minutes, stirring well after 4 minutes. (Wooden spoon may be left in bowl.)

Add butter and vanilla, blending well. Return to microwave and cook 1 minute longer. Peanuts will be lightly browned and syrup will be very hot.

Add baking soda and gently stir until light and foamy. Pour and spread quickly onto prepared cookie sheet. Let cool 30 minutes or longer. When cool, break into small pieces. Store in airtight container.

Variation: May use 1 cup pecan halves or 1 cup sesame seeds. Add them after the first 4 minutes of cooking.
